A Vietnamese Pho restaurant that is true to the soup’s French origin:
Who would have guessed that the Vietnamese staple, Pho, originated from the classic French stew “Pot-Au-Feu?” Pho which is probably the Vietnamese pronunciation of the French word “Feu”, meaning fire, has gone through many modifications to become a Franco-Chinese-Vietnamese melting pot. To our families, it has become a comfort soup and we cannot think of a better place to have it than The Pho Bistro.
For those of you who are new to Pho Soup, it is made of the following ingredients: beef broth cooked with a bouquet garni containing spices such as cloves and black pepper, thinly sliced beef or chicken, Chinese rice noodles, roasted ginger and fish sauce. At your table, you can add optional bean sprouts, lime wedges, chilies, and hoisin sauce to give your pho a personal dimension.
Until the Ashburn location opened, we used to trek to the original Centreville location on a weekly basis. We now go to this location in the Ice Rink Plaza and the staff always makes us feel like we are at home. After two visits, we guarantee that they will remember your custom Pho order. Our kids always order their favorite Crispy Fried Egg Rolls (Cha Gio) which are deep-fried rolls made with pork and shrimp and served with fish sauce. We like to order the Pho Ga which is chicken noodle soup topped with shredded chicken and served with all of the optional ingredients men tioned above. For those of you who are adventurous, we recommend the Pho Saigon- it comes with the works! This is a beef noodle soup served with thinly sliced eye of round, flank, fatty brisket, tendon, and tripe (yummy…).
When you visit Pho Bistro, keep the following in mind. Pho can be eaten for breakfast, lunch, or dinner. In Vietnam it is a cultural practice not to deliver the bill to a customer’s table, since it would be considered rude and seen as a way of trying to rush the customer out the door. So don’t be shy to go early and don’t take offense if you are asked to go to the cashier to pay your bill. It is all part of the experience.
